Vacuum Pot (Siphon) is an old novelty, and a visually stimulating way to make great coffee. Some believe it is the best way to make brew coffee. The key to getting great results are: using fresh high quality beans, correct grind with a burr grinder, and a clean filter in the Vacuum Pot.

Equipment: Vacuum Pot with burner, coffee, a burr grinder (not a blade grinder), and a spoon.

1. Grind the coffee fairly fine, usually between drip and an espresso grind. We recommend using 1-2 tablespoons to 10oz. of water.
2. Fill the bottom of the Vacuum Pot with pre-heated water. Assemble the top with the bottom. Add your coffee in the top.
3. Start your burner on medium heat and then slowly raise the heat until is starts to boil. When it starts to boil, the water will start to come through to the top.
4. When it is full, quickly stir the coffee and then put the lid on.
5. When the bottom has nearly no water (but before it is empty-the glass will shatter if it is empty and too hot), turn off the burner.
6. The coffee will extract back down through the filter.
7. Once the water stops, remove the top and pour the coffee. Be careful: it is hot. Enjoy!
