FLAVOR: Peach, Earl Grey, Citrus
Bright, sweet, and juicy notes of peach and citrus greet you at first sip, followed by hints of soothing earl grey black tea. This Ethiopian offering’s medium body and crisp finish make for an ideal sipping coffee, whether enjoyed first thing in the morning or as an afternoon pick-me-up.
Shantawene Washing Station, located in Bensa at the western border of West Arsi and just north of the Guji region of Ethiopia, began its operations in 2013. This washing station, also know as Ayla, processes cherries from roughly three hundred smallholder farms in the area. The project began as a partnership with Testi importers – a partnership that still remains strong today – allowing for a greater focus on coffee cherry quality. At Shantawene Washing Station, great attention is put towards cherry sorting to ensure that only the ripest cherries make it to production. This focus on ripeness, while common in other coffee growing regions of the world, is still a somewhat new practice in Ethiopian coffee production. West Arsi has become known for its excellent coffee quality as well as a structured and complex flavor profile. Enjoy!
