This coffee’s creamy and nutty notes of cashew are soon accompanied by light, buttery hints of shortbread. Semi-sweet chocolate comes through afterwards which contributes to the crisp body and round finish.

Story

This month's Roaster's Choice is the Guatemalan Candelaria Finca. This coffee has been featured in several of our recent blends, but our Roastery Manager decided it was time to showcase it on its own! This classically balanced cup of coffee makes it evident why it is such a popular feature in Temple's coffees. Candelaria has been an important part of the family history of the Zelaya family. It was bought by Luis Pedro Zelaya Aguirre in 2005 and managed by him since then. The farm is located in Alotenango, which is conformed by 280 hectares of coffee and 280 hectares of forest. The whole plantation was renewed in 2005 with good quality cup varieties and a lot of effort has been directed towards Good Agricultural Practices. Luis Pedro Senior focuses on proper soil and plant nutrition programs for healthy plants. Organic material (mulch) is obtained from shade and coffee tissue management for natural fertilizer, to control soil erosion due to rain and wind and also to reduce pressure from weeds. Tissue management in the farm helps to prevent and diminish the pressure from plagues and diseases. Ethological control (tramps) is used to control coffee berry borer instead of chemicals. And year after year training for the staff is held on matters of safety and security. Good Agricultural and Mill practices, and even a Kindergarten class is held for children present during harvest season. The coffee is wet milled in Candelaria and dry milled at Bella Vista, where cup quality control is held by the Bella Vista team. This farm is indeed a proof of the great results that teamwork can achieve.
