FLAVOR: Graham Cracker, Almond, Orange Zest
FINISH: Slight Linger
Subtly sweet, nutty, and toasty flavors come through at first sip reminiscent of graham cracker and almond. A hint of orange zest adds a pop of acidity that enlivens the cup through the medium body, culminating in a slight lingering finish.
Bernardo Teco Peña's love for coffee farming and production began when he was just a young boy. By the time he finished the sixth grade he had quit school to work on his family's farm full time. Purchased in 1951 by Don Bernardo's grandfather, Carlos Teco Garcia, Finca San Carlos is now operated by Don Bernardo and his father, Pedro Teco González. Together, Don Bernardo and Don Pedro follow stringent management practices during every step of production, from weed and pest control to storage and transportation. Equally important are the land management practices that help preserve the natural environment. Coffee pulp is used as a component of organic compost and the water used during processing is never returned to the nearby streams to ensure their purity. Large portions of the farm are dedicated natural reserve areas where wildlife can flourish. Particularly precious to Don Bernardo are the wide variety of native birds that reside on the farm, many of which he can identify by ear. The land also includes a preschool and primary school which give local children, as well as the children of the farm workers, access to education. These meticulous farming practices and deep respect for the land and community have enabled the workers of Finca San Carlos to produce consistently high-quality coffees time and time again.
