Guatemala Pulcal is the top selection of coffees that comes to us from Hacienda Carmona, owned by Maria Zelaya Aguirre. Originally purchased in 1910 by Maria's Grandfather, Mr. Luis Pedro Aguiree, the farm has grown to 112 hectares. Beautifully ripe coffee cherries are picked, pulped at the wet mill, and then dried at Hacienda Carmona. The farm is now managed by Ricardo Zelaya and Luis Pedro Zelaya. If you are a fan of Guatemala Hunpau, then you will love this offering. The farm also raises Holstein cattle for the dairy industry. On our most recent visit, we witnessed coffee pickers hand sort through their daily harvest to remove any cherries that were not a perfectly uniform red ripe color. This extra hand sorting is very time-consuming and rare but exemplifies the tremendous quality. This attention to detail produces the deep sweetness special in this offering from Pulcal.
