Story

Since this is Temple’s first Java Reserve coffee, we wanted to introduce something truly unique. This is a natural anaerobic processed coffee from Kevenka Coffees in Mount Ijen, East Java. Originally the Typica variety was introduced to the island of Java directly form Ethiopia by the Dutch in the early 19th century. Old estate Java coffees were typically Washed Processed, unlike the Wet Hulled coffees of Indonesia or Sumatra. which are known for their earthy, woodsy, and rustic flavors. Java has a long history within coffee. Brothers Kenny and Kevin Soewondo wanted to create unique and exceptional coffees much different from the commerical coffee sector. At their mill, they are able to process and sort coffee by processing method and profile. Kenny focuses on the daily operations and sales, and Kevin focuses on planning and quality control. Sourced from 300-500 farmers of Mt. Argopuro, the ripe cherries are left intact and sealed in tanks without oxygen (anaerobic) for three days in Botolinggo Village then dried for 7-10 days. Finally, they are moved to be dry milled at Driyorejo where they are checked for defects and sorted by density, screen size, and color. Kenny calls this their "super natural coffee" and "mindblowing," and we definitely agree, which is why we are excited to showcase this Natural Anaerobic Java as a Reserve!
