STORY

Following an eight-year absence, Indian coffee made its return to Temple in 2025, and we're excited to continue that journey with another exceptional harvest of the India Gundikhan Natural. Returning for its second consecutive year, this remarkable coffee is grown in the lush highlands of Karnataka, where vibrant fruit character, thoughtful processing, and a deep commitment to environmental stewardship come together.

Gundikhan Estate is located in the Chikmagalur district of India's Western Ghats, a mountain range celebrated for its extraordinary biodiversity. Owned by Saif Ulla, the estate is part of the KaadKaapi Collective, a group of coffee producers dedicated to wildlife-friendly farming and preserving natural habitats near the Bhadra Tiger Reserve. Saif's approach to coffee extends well beyond the cup, emphasizing native tree diversity, habitat preservation, and agricultural practices that allow coffee production and local wildlife to coexist.

Situated at approximately 1,300 MASL, Gundikhan cultivates Arabica coffee at a relatively high elevation for the region. Cooler temperatures can slow the maturation of coffee cherries, allowing additional time for flavor development and contributing to greater bean density and complexity. Combined with the estate's careful cultivation practices, these growing conditions help produce coffees with remarkable depth, vibrancy, and balance.

Saif brings the same thoughtful attention to processing, producing both washed and natural coffees that highlight the distinctive character of the estate. For this natural-processed lot, freshly harvested cherries are dried whole, allowing the fruit to remain intact around the seeds throughout the drying process. This method contributes to the coffee's pronounced sweetness, fuller body, and vibrant, fruit-forward character, creating an expressive cup that reflects both its origin and careful preparation.

Beyond its distinctive flavor profile, Gundikhan Natural represents a meaningful connection between specialty coffee production and environmental conservation. Through Saif's dedication to responsible farming and the collective's commitment to protecting the surrounding landscape, the estate demonstrates how exceptional coffee can be cultivated while respecting the ecosystem in which it grows.

We're delighted to feature another harvest from the Gundikhan Estate and to continue sharing the distinctive character of Indian specialty coffee. From its highland origins to the thoughtful practices behind every stage of production, this offering reflects the dedication of the people who bring it to life. We hope you enjoy exploring another vibrant expression of the Gundikhan Natural.
