Roaster's Choice Exclusive: Guatemala Candelaria
We are excited to announce our new exclusive Roaster's Choice selection for the month of April! This month, we will be featuring an exceptional Guatemalan coffee, the Finca Candelaria. For those of you who are Temple regulars, the Candelaria will be familiar, as it has been featured recently in our blends. We decided, however, that it was time to showcase this excellent coffee by itself.
Located in the region of Alotenango, this farm has been owned by the Zelaya family since 2005. Since then, the family has exerted considerable effort in putting quality back into the trees. They have focused on proper soil and plant nutrition in order to maintain healthier plants and higher quality crop. They use an organic mulch, made from shade and coffee trees, as a natural fertilizer, to control soil erosion and to minimize weeds. To avoid using chemicals, the team employs ethological traps to reduce the impact of coffee berry borers. This all leads to improved quality in the cup and also limits the impact on the environment, conserving it for years of coffee to come!
The resulting cup is a well-rounded coffee with a pleasant body and crisp acidity. The first thing you’ll notice is the creamy, nutty flavor note of cashew soon joined by notes of light, buttery shortbread. The body and finish are completed with notes of semi-sweet chocolate, rounding out the experience.
Here at Temple, we are big fans of this coffee and felt it was past due to let it shine on its own. We hope you enjoy it as much as we do!
