BREWING STEPS

  1. Heat filtered water to 208℉ in a gooseneck kettle. 
  2. Insert your paper filter into the brewer and prewet the filter. Discard the water.
  3. Weigh out 30g of coffee. Grind to a medium-coarse size.
  4. Transfer your coffee grounds into the filter and shake to level.
  5. After placing your brewer and decanter/mug on the scale, tare your scale to 0 and start a timer at the beginning of the brew, counting down from 3:30.
  6. Pour 60g of water over your coffee bed, ensuring all grounds are fully saturated. Wait 30 seconds to bloom.
  7. Pouring in concentric circles, add in the remainder of your water, until you reach the total water weight of 480g. 
  8. Place the lid of the clever on. Wait for the remainder of the time.
  9. Once the timer finishes, stir the clever 3 times. Place the Clever of your cup or range server to begin the draining process.
  10. Remove the filter and enjoy.
